Red Neck Taco

Today was leftover day. Not wanting to waste any of the great food we couldn't eat yesterday we resolved to incorporate a little of it into every meal. Potato Salad for breakfast - yum! Chicken mixed in potato salad for lunch - double yum.

But for dinner I decided to crank up the excitement. So if you ever find yourself with chicken, corn on the cob and a few other ingredients, then feel free to try this out.

Red Neck Taco
  1. Corn tortillas soaked in hot oil until they are brown and bubbly (and taco shaped).
  2. Diced chicken mixed with the corn off a cob, mozzarella cheese and red onion - cooked till hot and steamy.
  3. Equal parts mayo and salsa for sauce.
  4. Add a beer (in the bottle) and you're good to go.
I realize I won't be winning any cooking awards (and Martha Stewart is totally creeped out by my fantastic sauce), but it was yummy - and fantastically greasy.

Today I finished chapter seventeen {INSERT CROWD GOING WILD} and I head off into Eighteen having dispatched one bad guy. Only one more criminal to go and Maxie gets to have the honor of slaying this one.

Harry, Dad and Skipper were there in an instant.

“What is it?” Dad asked, brandishing the flashlight and looking around the room. Harry and Skipper had their fists clenched. Harry looking a tad more impressive than Skipper, since he still had his pants on.

  1. Nice recipe. You and your mayonnaise sauces. And damn, they always taste really good.

    Skipper with his pants off is not a pleasant image. I feel unclean.
